Understanding Milk Pricing Units Worldwide
Because milk is a liquid that is frequently transported in massive bulk trucks, different countries developed different standards for pricing it—some based on volume, and some based on mass.
The US Hundredweight (cwt)
In the United States, milk is not sold by the gallon at the farm gate. It is sold by the Hundredweight (cwt), which equals exactly 100 pounds of milk. Why? Because the volume of milk expands and contracts based on temperature, but its mass (weight) remains constant. Weighing a truck full of milk is far more accurate than trying to measure its exact volume.
The European 100 kg
Similar to the US, the European Union largely prices milk by weight to ensure accuracy. The standard is per 100 kilograms of milk. Since 1 kg is about 2.2 pounds, 100 kg is roughly equivalent to 2.2 cwt.
The Liter & Gallon (Volume)
In retail environments and in many emerging dairy markets (like India and Kenya), milk is priced by volume (Liters). One liter of milk weighs approximately 1.03 kilograms. One US Gallon equals 3.785 liters and weighs about 8.6 pounds.

Component Pricing vs. Volume Pricing
It is important to note that a "base price" per cwt or per liter is rarely what the farmer actually takes home. Modern dairy markets use Component Pricing.
Milk processors aren't just buying white liquid; they are buying fat and protein to make cheese, butter, and yogurt. Therefore, the base price is adjusted based on the cow's output:
- Butterfat: The standard base price assumes 3.5% butterfat. If your herd produces 4.2% butterfat (common with Jersey cows), you receive a significant financial premium.
- Protein: The standard base assumes roughly 3.0% true protein. Higher protein yields higher premiums.
- Somatic Cell Count (SCC): Processors pay premiums for very low SCC milk (indicating healthy cows and longer shelf-life) and heavily penalize high SCC milk.
Because of component pricing, a farmer getting a "lower" base price per cwt might actually receive a higher gross milk check than a neighbor getting a higher base price, simply because their milk has higher fat and protein content.
